With Indian food I pay attention to the spices first. Can I taste individual notes, cardamom, cumin, garam masala, or does everything blur into a diffuse heat? Good Indian cuisine builds flavors in layers instead of simply being hot. It also matters to me that the bread comes fresh straight from the tandoor and that the vegetarian dishes are cooked with the same care as the meat currys. These details tipped the scales for this list.
