With sushi, quality reveals itself to me first in the rice, not the fish. Is it properly tempered, gently soured and loose rather than sticky? Only then do I look at the fish: does it smell fresh, does it glisten, is the cut clean? I also like being able to sit at the counter and watch the cooks at work, because someone who shows their craft openly usually has nothing to hide either. That is exactly what I paid attention to for this list.
