Tapas are the most honest way to eat out, as far as I am concerned: you share, you try things, and nobody has to commit to one dish. For this list I paid attention to what actually makes the difference, which is ham and cheese of decent quality, croquetas with a creamy centre rather than stodge, a wine list that goes beyond Rioja, and staff who do not sigh when you order another round.
