For me, French cuisine stands for care down to the last detail. For this list I tasted and paid attention to whether the sauces were really given time to develop, whether the produce is first-class, whether the wine list offers clever companions and whether the service stays attentive without feeling stiff. What I find most beautiful are the houses where ambition and cosiness do not exclude each other but support one another.
