Warm pita that still steams when it lands on the table, next to hummus so creamy the spoon almost stands up in it. Israeli restaurants in Berlin have built a handwriting of their own over the past few years. The cooking itself is a meeting point: Yemeni soups, Moroccan spice, Eastern European baking, and vegetables treated with as much care as any cut of meat. Berlin gives you every version of it. Kosher kitchens that keep dairy and meat strictly apart, sharing concepts built around long tables and open fire, small counters that stuff sabich into pita until nothing else fits. Tahini on almost everything, charred aubergine, pickled chilli, amba. So where do you actually eat well? We worked our way through bowls of hummus, pans of shakshuka and long mezze tables, paying attention to the tahini and to whether the pita came straight from the oven. In Kreuzberg, Golda delux on Erkelenzdamm pushes a sabich across the counter that people queue for. In Charlottenburg, Balaboosta bakes kosher on Waitzstraße, with hummus, sabich and a counter full of pastry. Hummus is not a starter dip for me, it is a meal in its own right, which is exactly how it is eaten in Israel. For this list I paid attention to where the tahini comes from, whether the chickpeas are cooked fresh, and whether the pita arrives warm. Just as important: places built for sharing rather than ordering separately. The result is ten addresses stretching from Charlottenburg to Neukölln.
