A good cup of tea needs time, and that is exactly what I take for this list. I paid attention to whether the leaves are brewed loose and single-origin or just float in a bag, whether the steeping time is right and the water is at the correct temperature. It also mattered to me to have an atmosphere where you can really switch off, and staff who enjoy advising you on the tea rather than just serving it.
