For me, soup is the most honest dish of all, because here no kitchen can hide behind side dishes. While testing, the quality of the broth mattered most to me, whether it was cooked with time and good ingredients or comes from powder. I also paid attention to fresh toppings, to changing menus and to whether a portion really passes as a meal.
